Is there anyway to sync a Newton 2100 with a iBook 2001 running OS 10.1.1 ?
Hell, is there even a way to sync a Palm Vx with OS X?

sure, check the FAQ:

simpliest way is probably to get a keyspan thingie or a compatible ethernet card - i use both solutions. if you just after a backup - backup to a card. theres no way to sync a card to say entourage dough. if you want to synch names etc with newtourage, theres a solution from dellcan, hes wörkin on an OSX solution as well.

Anyone know where I can get a USB to serial adapter so I could hook it up to my Pismo?

Keyspan makes the adapter that works best for me. They had Mac OS X beta drivers a while ago, and I think they're still floating around the net somewhere.
