The most obvious and immediate OS X application I'd like to see on the IPhone is OmniOutliner. After all, the point of it is to make lists, like shopping lists, etc.
The things that would make for a good application for iPhone are that you mostly want to read data rather than input it, and it will nicely fit on a screen without having to scroll in more than one direction. Also, the file size should be reasonably small. What other applications would you like to see on the iPhone?

ichat...for sure, and to run Instant Messages INSTANT..meaning over data not SMS....i really really hope it has this haha
i also hope because of this cingular gives iphone its own data plan like the sidekick $20 unlimited data/sms/email/etc data

I kinda meant applications you could use on the go, that would fit into the lifestyle of having information with you. Do people really want to be doing things like creating movies in Final Cut Pro on a 3 inch screen?

Now that could be the tipping point to really push adoption beyond the usual Apple fanboys and into the mainstream.
And of course the connector should have an IR receiver and Apple remote.

I do have to wonder if it could handle it though. Would it need a graphics card to really be able to push Keynote presentations out to a projector? The graphics on the little screen of the phone itself look terrific, but what about a 1280 X 800 (or larger) projector screen?
Terminal anyone?
Although yes, OmniOutliner is a winner too.

Text edit or some similar small sized document generator for note taking and such on the go :)
the pinch to zoom multi touch thing opens up a LOT of possibilitys RE games... sod it... RE ANYTHING :)
The number one app has to be a ConvinceMyWifeToBuy.app, but it isn't available on OS X since I haven't been able to purchase a Mac since after I was married. Kidding. :)
I'm in the middle of the iPhone demographic: a person who's on the go a bit, doesn't want to do work and would rather enjoy myself while traveling. So, a very capable web browser and music/video player is just down my alley. Mini-Safari and mini-iTunes is all I need. Oh, and games. Age of Empires and other RTS games. I assume small games like those on the iPod will be fairly easily to bring over.

Well, I hope they make it possible to create widgets at least. For exampl, a Delicious Library-widget would be sweet, so that I can check what records I have when I go to buy "new" ones at a second-hand shop. Lots of that kind of widgets that sync with the major app would be great. More examples could be recipe programs that syncs grocery lists when you are going shopping etc. (Well, that could be done without an extra widget since they could sync with the notes application, but anyway...)

1) Itunes -easy first one
2) QT - I want to be able to play video's sent to me via email
3) iChat - there will probably be tons of integration between iPhone and leopard with iChat
4) .Mac integration - I would like to be able to snap a picture and upload it to my .Mac homepage with a simple flew clicks..
5) iWork and iLife readers- I don't need the apps themselves, but I would like readers at least.
6) Apple Chess
7) Apple Calculator - Not only the regular calculator, but the scientific and programmer too. Whent the latter two are selected, the phone rotates to landscape mode.

You could download any document on your computer to the phone, so if you forgot to sync or didn't know you were going to need this particular thing, no problem, just fetch it on the run. You could do quick checkups and fixes on servers you administrate.

I totally agree! I use the terminal 100% of the time I use my computer, so adding the terminal to the iPhone would be totally awsome! :)

This is not an OS X app but it is something that I think many people would like.
The ability to display random photos like those LCD photo displays do. This way, when your not using your iPhone, you can prop it up on the long side and it'll radomly display your pics.
I'd like this because I recently decided I wanted a LCD photo display until I saw the prices of them. They are more expensive than many mini-DVD players and I think mini-DVD players require more effort to build.

Lets go for the full package and get Cisco VPN for connecting securely to work along with terminal as mentioned above and despite the really small screen Apple and Windows remote desktop apps would be killer.
I think it is pretty obvious they will add the 'back to my mac' feature from Leopard and .mac to the iPhone so your remote mac can do all the heavy lifting and they won't have to open up the iphone to developers since all apps will be available via your computer.

A drawing program of some sort along with a photo editor where you can apply overlay effects like brightness/contrast, hue/saturation, levels, and other effects.
A Goo/Liquify effect would be great too to use with the touch screen.
Along with a way to save the photos as well.
