Is there a site I can visit that will have "resale" values of used Macs?

Ermm...ebay? Seriously, it's the most realistic way to figure out how much your old Mac is worth. Everymac lists prices, but they are way too high.

If it's a reseller of used macs, I don't think you're going to find anything that isn't horribly inflated. Ebay is nearly as bad with people asking for upwards of 60% to 75% the cost of new machines for macs that are over 18 months old. These people are dellusional; but, since Apple hardware seems to be moving at half Moore's Law, Macs have been able to hold onto their value a little longer than normal -- even for a mac (which is traditionally better than a PC in this regard). One wonders how long this can continue: Current mac prices are too high, both new and used. The situation is now so far out of hand that a user can look at a pretty fast PC (in the 1-2Ghz range for LESS than the cost of a 2 year old 400ish Mhz G4. Even if it's a mac, at some point it just isn't worth it anymore, especially if you're thinking of using OSX.

The best bet for Mac purchasing seems to be the education store's special bundles. The machines may be a little outdated but at least you get a warrantee, and the machine isn't so far behind current (Mac) hardware. Unless you can find a really good deal, don't buy a used mac. Sell your new macs before they loose too much value and put the money towards new machines if you want to ease the sting of a new mac purchase a bit. You're always going to be out you're initial investment, but with a new machine your closer to respectable performance and have some 'upgrade' flexibility in terms of resale value.
