Imperial units versus metric units

I was hoping I could set my height and weight in feet/inches and pounds but unfortunately I don't seem to be able to get that option on my Apple Watch.

 

The Apple set up video shows the measurements being set in imperial units but when I set up my Watch I can only use metric units for my height and weight?
