I use AudioCorder for its scheduling feature. Final Vinyl has the feature that you can connect a phonograph directly to the microphone input and it applies the correct amount of de-emphasis so you can record directly from LPs without a stereo. Other software packages have their own special features. For general purpose recording most any one will suffice.
I'd use whichever program you felt comfortable with. Final Vinyl is fine. You could also search Version Tracker for recording software. I think there are one or two freeware packages. iMovie would be awkward for this purpose.

edit: i guess this program saves to mpg format, is that ok? or do i want to save things as .aiff??
