OK, now all my music is on the mac or the ipod in MP3 or 4 or AAC... how do I get it back into a format all those oh-so-20th- century devices - quaintly called CD players - can understand? You know, CDs?

What's the best app to do that in OS X?
Uh... I would try iTunes. It's let you burn playlists to CDs since version one.
If you want to control the space between each song on a per song basis as opposed to a per CD basis, use Roxio Toast.
