Changing background color of notes?

Maybe I just missed it. I want to change the background color of notes from yellow lined to some different other colors. The color option only seems to change the typed characters. Anyone know how to do this?

    Click on the "i" in lower right corner of the stickie.

    This is not for stickies but for Mail 3.0 in 10.5. Mail now has a Notes and To Do button at the top. That is the note that I am trying to change. Thanks anyway.
