A Query for the Culinary Masterminds of AI

Anyone know of a good web site that provides free recipes? In particular, I'm looking for a site that has a lot of good pasta recipes...have something in mind for the woman on Valentine's Day but I'm not entirely sure how to make the sauce.

If anyone has ever been to the Cheesecake factory and had their pasta Carbonara, you know what I'm talkin about. Sort of like an Alfredo with bacon and chick peas, but I'm not sure what all goes into the Alfredo, etc. I could do it the cheezy way and get a Ragu Alfredo and throw in the rest but...nahhh. I figure if I screw it up it will make for humorous stories at a minimum!

Since it's Valentine's Day, may I suggest a nice Putanesca?

A more amorous choice, perhaps? Recipe here

Nah, too many luckless bastards take their women out to dinner on Valentine's only to be greeted with the thought that no matter where they take them, it's boring and unoriginal - not to mention, crowded.

I took her out last year to the last original place on earth, but I'd never get a reservation there now anyway so...to the kitchen I go. Never let it be said I don't have a sensitive side. A hockey player that cooks pasta that isn't noodle-roni or mac-n-cheese...imagine!

I've never had it from the Cheescake Factory, but it's the easiest thing to make in the world. You take half a pound of spaghetti cook it, drain and toss it (don't rinse)into a bowl with two well beaten room temperature eggs. (the hot pasta cooks the eggs). Add in a half pound crumbled bacon or pancetta, a quarter pound chopped Italian Parsley, grated Parmigiano Reggiano (expensive, but worth it), and fresh black pepper.

Alfredo is cream sauce; you basically simmer and reduce heavy cream with cheese. It takes about twenty minutes on a very low flame. You finish it with ground white pepper and more cheese.

I find MarthaStewart.com is pretty okay for free recipes (Even though I find her unbearable)

BTW, thanks Markjo...found a decent recipe on the foodtv site. Now if I can just figure out the directions ahead of time I'll be all set. While we're at it if anyone has a good mexican dish they make at home (not tacos) that they can recommend, I'd like to try one of those before winter is gone as well.

This is pretty easy if you have a food processor. A blender won't really make it though. The mole is really good, and can be used with chicken as well (grilled chicken especially)

[quote]Mole Poblano

Recipe courtesy Ninfa Moreno Orea

1/4 pound sesame seeds
Olive oil, for cooking
1/4 pound almonds
1/4 pound peanuts
3 bananas or plantains
1 pound raisins
1/4 pound tomatoes
1 pound fire roasted poblano chiles, rehydrated in water
1/4 teaspoon aniseeds
1/4 teaspoon cinnamon
1 ounce unsweetened Mexican chocolate
2 pre-cooked turkey legs
In a medium saute pan, toast sesame seeds and place in food processor. In same saute pan add oil and fry almonds. Remove almonds, place in food processor, and fry peanuts. Remove peanuts, place in food processor, and fry plantains. Remove plantains, place in food processor, and fry raisins. Remove raisins and place in food processor. Remove all but one tablespoon oil and fry tomatoes.

In a food processor grind together sesame seeds, almonds, peanuts, plantains, raisins, tomatoes, poblanos, aniseeds, and cinnamon; this is the mole. Thin with left over chile water. In large saucepan, heat oil. Add mole and cook in oil to bring out flavors. Add chocolate. When melted, add pre-cooked turkey legs and simmer until the turkey is heated through.

Yield: 2 servings

Anyone ordered anything from www.penzeys.com? They have every spice known to man. I want to place an order but I'm curious as to their quality.

Matsu's just trying to make an oblique reference to the fact that there is a small amount of MDMA in nutmeg...

seriously, though, Matsu, for the $$ of all that nutmeg, that's a lot of pills you could buy...

Call me.

(just kidding)
