If your a pot roast or beef stew type of guy (or gal), give this a shot.
Warning, takes a long time to cook and will smell up the neighborhood good!
Cut up your beef in marinade size portions, also to fit into your baking pot.
For 3 lbs of beef your going to need
Mix:
2 cups of Apple cider (good stuff)
1 whole head of pealed and crushed garlic
2 Tablespoons each: whole peppercorns, dried thyme (or fresh)
1 Tablespoon each: mustard seeds, cajun seasonings
1 Teaspoon each: ground allspice, ground cumin, celery seeds
2-4 whole cloves
Marinate beef with above ingredients overnight in air tight sealed bag, transfer all to oven safe pot with lid and add one bottle of a dark beer (Guinness) in the morning. (to the pot, not your stomach!)
bake on low temperature for as long as you can stand it and the beef is cooked, the longer the tenderer it gets, 8 to 10 hours.
strain the leftover juice of solids (add cornstarch to make a gravy?)

The assault on your sense of smell will be overwhelming and the hunger pangs sharp. I had to apologize to my neighbors for making them so hungry, they were looking a bit violent in the eyes.
