Its mainly marketing gimmickery. 24 bit audio will be much much less apparent than if they decided to provide ALAC or god forbid, FLAC files for every song on iTunes. On a lossy format like MP3, 24 bit won't matter in the least. Not to mention iPods and iPhones don't support 24 bit, so you would either have to convert on the fly or get new hardware.
