Does anyone run Internet Explorer on their Mac? If so, what are the pros and cons and what version is recommended?

Given that it was discontinued in 2003, its last version is 5.2.3 (where the current Windows version is 10), and it doesn't properly display a single website that exists on the Internet today, you need to use Safari. Period.

Safari, Firefox or Chrome on Mac or PC. Then you will realise what utter nonsense Internet Explorer is and ever was. Seriously, it's garbage.
