I put a few very large videos on my ipod (30g video) and then I deleted them off my ipod, yet the space did not free up as if they were still on my ipod. I have heard that there is some sort of trash folder but I cannot find anything like that anywhere. Anyone know how to get rid of this "Other" space?

With you iPod is connected to your computer, try emptying Trash in the Finder.
If that doesn't help, far easier than trying to track down stray files in invisible folders and the like, just wipe the contents of your iPod completely, reset it, and let it sync up to iTunes again. That might be slow, but it's effective and simple.
Were you using your iPod as a portable hard drive, storing other stuff besides stuff that iTunes puts there? If so, make sure you've got that stuff safely backed up before wiping and reseting your iPod.

Depends how much music you have. I've got nearly 30 GB, and many people have a lot more than that. That takes more than 20 minutes to sync! And although the difference between USB 2.0 and Firewire transfer speeds shouldn't be all that great, it sure feels like my latest iPod that only does USB syncs twice as slowly as my old iPod via Firewire.
