So far people have been able to use the iPhone without the phone part but do you think anyone will really make the coup de grĂ¢ce of iPhone hacks and unlock it to any SIM without AT&T activation first?

Yes, but not without firmware updates (which would break copywrite law). Apple would be able to patch any holes in official iPhone updates, which would probably lock your phone again.
