The most annoying ommision to me is not being able to scale the processor speed of 'books. When I'm on the road, I'm generally not playing Quake III or something... just surfing wirelessly or writing some Java, maybe listening to iTunes. I don't need the full 667 MHz to do that. Anything more than the minimum is a waste of battery.
I am glad they brought back the 'nearly off' screen brightness mode in 10.1. I really missed it in (I think) 10.0.4. Maybe it was 10.1.1 vs. 10.1. I can't remember exactly.
Also, I think that the Energy Saver should be somewhat connected with the GUI. It would be nice if when you switched to battery the dock magnification could be set to turn off, the genie switched to scale, bouncing dock icons stopped, etc. Maybe even mess with some transparency stuff, but maybe that's going too far. That way the processor could be used more efficiently for the tasks that you actually NEED, versus the tasks that make the OS look pretty.
You can do all of that manually, but it should be automated for greatest ease-of-use.
