iPhone Backup: What does it back up?

I should probably get an iPhone book bible or something because I still find some areas hazy. Foremost I do not understand the back up feature. I always supposed it took an image of the whole phone to be able to restore "as is". Turns out it's not like that. Does it back up app data? Podcast? And if no what solution do Ihave to back up an app with it's data, that's the most important thing, the data in the app.

I guess a superduper for the iPhone is what I might need, now if apple only allowed this.

Your contacts, music, movies, apps and images are stored in the equivalent locations on your Mac during a sync. The backup is for data that has no equivalent and includes your SMS messages and your iphone settings.

Taking a complete phone clone isn't really needed in the way it is for a desktop as there are much fewer settings and complex apps and most of the data is media, which is synced anyway.
