    Cinebench and Geekbench:

    http://www.primatelabs.ca/geekbench/

The first one will test your GPU too.

If you mean what app would it be suited for that you can actually use for something, I'd say video encoding apps like Handbrake or even just apps that do any kind of graphical rendering (After Effects, Shake, Maya, Cinema 4D).

You might want to consider some of the Ray Tracing programs float about the net.

Video encoders have already been mentioned but rember to base your runs on encoding of a standard file. Bench marks are much good without valid comparisons.

If you are into programming rebuild the Linux kernel with a parallel make operation.

You might want to look into Phoronix's bench marking suite. Targetedtowards Linux but you might be able to test some of the system.

OK now here is the big problem make sure you have recent program release actually know to be parallel. The biggest problem right now is finding software that filly exploits Snow Leopard. In theory there should be much difference in software that uses alternative parallel libraries and libdispatch. In practice it looks like Apple put a lot of effort into optimizing GCD. So you may see a wide array of results until the software development cycle settles down.

Test your mac with several synthetic benchmarks. It'll stress your machine and the results can be posted on the threads here so that others can see how the new machine compares to older ones. That's useful information if you're thinking of buying a new machine.

Lundy started a thread a while back and you can download the app and post you results here.

Cinebench is also good and post your results here.
