Need for Speed (and Premium Audio)

I'm looking to get an 11.6" MacBook Air with maximum specifications. Even though there is a difference of only 200mhz, exactly what increase in performance can I expect by selecting the 1.6ghz processor vs. the 1.4ghz processor in the way of video encoding? How much time will be shaved off per hour?

Also, I see that the new 'Air also has an Intel HD Audio processor. My previous MacBook Pro (the current base model as of October 2010) had the same. Are all Intel HD Audio processors the same in every Mac, or are there different variations per model? I'm an audiophile and would like to see the same audio quality that I'm used to in more powerful Macs.
