If you just want to do it once then just drag the document onto the applications icon or an alias of that application.

If this is in OS 9 and you want to reroute all documents of a certain type to a specific application I recommend getting Default App. Probably it is on Version Tracker. It is a control panel that does just this. You drag a document to the open control panel. Drag an application to the control panel. Click on these two in sequence and forever after double clicking the document opens it in your application of choice.

I use it to force all simple text files to open in Tex-Edit Plus and various graphics files to open in Graphic Converter.

In OS X you select the document, do a Get Info (command I) then in the pull down menu select "Open with application". This gives you the choice of choosing an application that will open this document and all others like it in the future.
