Error in setting up new iPhone 4S

I bought my wife a 4S. Our computers share my Apple ID, she does not have her own Apple ID, so I set up her phone using my ID and account. Seems this was a mistake because any email sent from this device sends it from me and not her own Apple email account. 


How do I go back to beginning and re-set-up the device?
