Backup data before a fresh install of a newer OSX

What is the best practice for backing up data on a mac prior to erasing the HD and upgrading to a clean install of the lastest OSX. If I clone the drive, that just leaves me with the same old OS.

Also, do I need to sign out of icloud, itunes and imessenger?
