Airport Express, Airplay and Toslink

Does anybody have any ideas around this?

1. When I stream apple music from my iphone to the airport express, which in turn send the signal to my AKM DAC, what is the quality of the audio stream sent and output out of the toslink optical out on the airport express 2nd gen.

2. I understand the signal is a digital signal over wifi, and if so, how is the volume controlled by my iphone?

    The optical output is limited to 16-bit/44.1 kHz audio, AFAIK, and anything sent there will be resampled to 44.1 kHz and truncated (not dithered) to 16 bits.
