how can i change which applications handles each type, like for example making all html files open with mozilla instead of safari, or any file type with any app
Select a file, we will use a html file as per your example.
Hit command-i (get info)
Select the open with section, select the application you want (Mozilla) and then there is an apply to all of this file type. It will change every html file on the computer to open with Mozilla.
