Now that I've managed to follow the directions, does anyone know what 'LPD/LPR Host or Printer' does? We are using LPR exclusively at work.

Open Print Center app.
hold down the Option key and click "Add" button.
In the next pop-up box, you will see the usual drop-down menu. Click it.
You should see "Advanced" options at the bottom.
thats an excellent spot!
BTW, did someone managed to use a serial printer with Jaguar ?
I tried on 2 different computers, but didn't see the 'Advanced' option on either

Do you have to turn anything on? CLI?
I've tried on more Macs (10.2.4) and none of them have this.
Does AppleTalk need to be on or something?

LPD/LPR means you can print via a unix machine setup to be a print server.
