You can find streaming stations in *cast format at places like Live 365, IceCast and Shoutcast.com. If you go to these sites, and have iTunes set up for internet music playback (check your iTunes General preferences), clicking on the links to the streams will import them into your Libraries folder. You can't however add them to the Radio source area. As a workaround, yu can create a smart playlist for these radio stations ("kind" contains either "url" or "stream"). Radio stations that only have Real Audio links can't be imported to iTunes though.
The radio listing is actually from kerbango.com (at least it used to be, not sure where it comes from now), so it's dynamic, but not changeable by us. I do what BuonRotto suggests.

Drag one of the predefined radio stations into the source well and it appears as a playlist with the station in it.
Do a Cmd-I on the station and change the URL and name to the one you want to add.
