Cocoa and Text-Smoothing

Can Cocoa programmers include a 'disable text-smoothing' option for the text in their programs? Or are all Cocoa programs forced to use text-smoothing? Because I like the ability to disable smooth text in text editing programs, like BBEdit which does it (I don't know if BBEdit is Cocoa though, I've always assumed it was Carbon), because sometimes it gets annoying.
