It is 7200 RPM. Mine is a Seagate and by entering the part number (from Apple System Profiler) on Seagate's web site I determined that it is a Seagate Barracude ATA V, a fine hard drive.
Older eMacs than the current revision used 5400 RPM hard drives but I don't think any iMac has used hard drives slower than that (except perhaps some of the very early ones which I think were slightly more than 4200 RPM, perhaps 4400 or 4500).
