Just hold the command/apple key, click the menu extra you want to move or remove, and drag it side to side or off the menu bar altogether.

Menu extras can usually be removed and their parent processes will still be running. iChat is an exception to this rule. If you quit iChat and are still online, removing the menu extra will sign you off. Similarly, you can't use fast user switching without the User menu extra.
