but when i upload my adress book, there all in one folder

Anyway, the way to do what you want to do is to make groups in your address book. In the addressbook application, make sure you're seeing 3 columns. The first is your groups. The second should have all your contacts and the third is the information about the card you have selected. Under the first column, there's a plus button. Click it and name it what you want (e.g., friends). Now drag all the cards you want in that group over the new group.
Here's a little movie I made showing how it works.
That's just the way it is as far as I know - the iPod disregards groups and just lists all of your contacts alphabetically. The "groups" thing is part of Address Book only.
I'm sure Apple could do something to fix it in the future - the contacts are just stored as a vCard file on the iPod drive, and I *think* that contains the group details for each contact, so it's just a matter of new iPod software.

but, when i Sync to mu iPod, i can"t see the folders, tehre all in the same "contacts folder
