Is there any software available to track internet use on Macs? The history can be deleted - I'm looking for something that requires a password and allows you to see what your kids REALLY look at on the internet.

Yep, the Netgear routers have this capability. It won't tell you what someone is Gooogling for, but will tell you they went to Google.

There is no such thing. If there were, the PRC could have saved a few billion dollars on their Great Firewall of China, and they'd have even fewer problems throwing dissenters in jail than they do. Ditto Iran and others. Log files can be modified, histories deleted, etc. But proxies are the biggest hole, and there are free, easily-accessible ones like anonymizer.com.
You could prohibit your kid from using a proxy, or choose to equate using one with visiting goats.ex, but if you're already at that point, you've lost.
So if you're talking about your own kid, put the PC in a public area, try keep an intermittent eye on them when they're surfing, and above all try to raise them well. It's amazing how many potential problems that solves.
