I think they'll be keeping it as a G4-based Mac for a while. All the eMac is supposed to do is run OS X and iMovie, since it's a educational, lab-type computer.

But it could do all that faster if it had a G5 processor in it, why deliberatly cripple a computer?

Uh, G5s are actually cheaper than G4s... I'd be surprised if price is what's really holding Apple back from putting a G5 in the eMac. If a G5 eMac is on the backburner, I'd imagine it's because there are other things with a higher precidence, like a G5 Powerbook.

uh, maybe the processor itself, but it would sound like a jet with a crappy, cheap colling system.
The real problem is high demand for G5 iMacs right now, there aren't enough 970's to go around. The eMac has plenty of cooling capacity. If IBM can just start getting more chips out, I think the whole line will go G5 quickly.
