On OSX Server - System prefs - energysaver - options
you can choose to reboot if the machine freezes. This doesn't work all the time though as the machines will hang with a white screen and that little thingy (fro want of a better word) stoppped at the bottom of the screen.
My Support calls to Apple haven't helped either (6 machines do this different specs/versions).
Dont forget this reboot feature only works when the kernel catches the panic. Often, if the kernel in on the cpu at the time of the freeze then it won't be able to do anything either. This is the reason some apple techs gave me.
W2K and XP clients will generally not reboot when windows hangs. It does reboot when 3rd party software causes the hang. This is the same for OS X tho (pretty sure it also happens on client as well).

Strange that OSX client doesn't have that functionality, every NIX I know and even Windows has an option to automatically reboot after a kernel panic.
