Long answer = YES *with risks
Why no? Apple has the iBooks, eMacs, iMacs set to only mirror the image
This "lockout" is only in the firmware of the Mac... Apple does NOT support this but there have been "3rd party" firmware "updates" that would set it to "allow" mirror or extended.
I haven't personally tried this yet (no real need other than if my iBook which doesn't support this could span) but lots of people on these forums have used this with success as well as some people I know.
