For those that care here's the situation broken down:
You can pair the phone with Mac OS X with Bluetooth, and send files back and forth: install apps, beam pictures, select all your contacts in Address Book and send them to the phone. Hence keeping your phone contacts and P800 contacts in sync is possible. Kind of.
iSync uses a protocol called IrMC over Bluetooth to sync with devices like the T68. The P800 can not do this, as it uses the more modern SyncML exclusively. SyncML is not yet fully supported by the Bluetooth specification. So "Bluetooth" needs to change and Apple need to tweak iSync too.
iCal uses .ics as its native format. The bundled calendar in the P800 uses .vcf so you can't "select all" in iCal and drag the entries to Mac OS X Bluetooth File Exchange.app ... if anyone can automate .ics to .vcf using some script I would probably give them a BJ.
.Mac contains a big-arse SyncML server, which iSync uses for the "Sync with .Mac" services. The SyncML protocol is designed to sync over-the-air with mobile devices, and the P800 DOES support this. Unfortunately, unlike many two-bit German and Scandi software houses, Apple has not made a way for mobile devices to access their SyncML server. So your second Mac can access it, your P800 cannot. I would be STAGGERED if Apple aren't working on this (but they've staggered me before). This would mean cool abilities for someone to add entries to iCal at work and have your mobile's calendar change. If Apple are using standards this should be a piece of piss and I'm not just saying it.
Address Book cannot pair with the P800 to manage SMS / phone calls. This may be due to an issue with OBEX and I don't know enough to know who could fix this ... but I'm sure it's doable.
Are you saying that the P800 cannot access it's addressbook for outgoing and incomming calls?
I held off buying the Treo and T68i for this 'phone and I am amazed at it's poor intergration. What possible use is a phone that can't sync, with either Outlook, Entourage, ical or Mail... none at all.
Lets hope that a BT Treo makes and apprearence with PalmOS 5 support.

It's all really annoying.
