It's EFI. EFI allows small programs much like open firmware, and apple wrote it's own code inside it. An Apple rep on the floor show said Windows Vista would probably run just fine out of the box, since vista supports EFI.
Confirmed direct from the show flow.
EFI is a huge leap in improvement over open firmware. He also said target disk mode and firewire booting work just fine.
