I want a 17" iMac with a 2.0 GHz Duo and 256MB VRAM. Is there any explanation why they won't let you do this. I am fairly new to the Apple world, but I am aware that they have done this in the past, just curious if there was a specific reason why.

Because they wante you buying the higher margin product
