Is there an app or a simple command line solution to compiling code in the stuffit format without having to use code warrior/drop stuff for a carbon app? It'd be nice to be able to use gcc and xcode, etc.

Perhaps if you tried explaining again what it is you're wanting to do?
Compiling an application has nothing to do with StuffIt, so I'm a bit confused...

Don't use Stuffit for anything.
If you want an installer, use Apple's installer.
If you want to compress a program you have built, put it on a compressed disk image using disk utility.
