I'm running InDesign 3.0 and Photoshop 7 on a black Macbook. Sure, it's sluggish (I only have 512k of memory--will up to 2gig asap) but I find it very acceptable; it can only get better with more memory. Obviously the apps you mention will run even better on a Pro machine.
I used to run Quark 6 on much weaker hardware, and it ran great. So I imagine rosetta should be fine for it. CS is probably going to be sluggish, because it's a bloated monster that's sluggish in Windows on P4's, but there's nothing you can do about that except wait until Q2 2007.

P.s. I noticed that the MBP's don't ship with paired memory. Does one have to pair it or could one just get a second 512MB Chip for 1GB total?
