deleting email addresses from MAIL

i'm trying to figure out how do you delete email addresses from mail. basically, at the prompt when you enter any letter, i.e. such as the letter A, you will get a list of email addresses that you had sent... in OUTLOOK, all you have to do is highlight the email address and press the DELETE button. how does it work for MAIL? i figure that going through a long list of past email addresses gets a bit tedious... your assistance is appreciated.

Launch Address Book and delete them there.

actually, the email address that pops up are not in my address book. these are address that maybe from responding to forum members, sending messages through website contact info., etc...
