This is Apples first Intel desktop, the iMac is nothing but a stationary laptop; they probably wanted to limit some of those options untill they know that their manufacturing process is online 100%, going all-bto is a huge change for Apple. I would look for them at the same time the xServes launch.
Uh, could it also be that those are 5000 series CPUs instead of the lower-clocked but in fact faster 5100 series Xeons that the Mac Pro and Xserves use? Think the difference between a 4.0GHz P4 and a 2.66GHz Core 2 Duo: the 2.66 is gonna be faster.
I'm thinking that there aren't even any Xeon 5100s in production yet beyond 3.0GHz.

For the record, there will be a 3.2 GHz Woodcrest at some point. It is supposedly coming out with the Kentsfields and Clovertowns (so it may be Nov., or it may still be Jan.) So we may see that in due time, but Placebo is correct.
