Looking for OS X music software

We might be getting an iBook trolley for our school in the UK. It's for the Art and Music departments. They currently use Cakewalk on PC. They need software to interface with keyboards (MIDI I think) and particularly for writing music scores. I guess they will want to be able to play them back through a variety of instruments and print out the score too. What is the best software to ge on an education budget? We will need at least a 10 user licence, perhaps up to 30.

Don't forget Apple's recently acquired 'Logic'! A hands down winner in competition with Cakewalk!

There are alot of good software suggestions, but most of those are more(and less) than what you seem to need. These have lots of fun audio and midi sequencing tools, but minimal notation capabilities; you are in need of good notation software. <a href="http://www.sibelius.com/"; target="_blank">Sibelius</a> is the only choice for running on OS X. Finale is the only other big name, but it doesn't look like that will be coming to OS X anytime in the immediate future.
