Mail SSL question

I don't understand what the two SSL options are in the Mail app (mail-preferences-account-edit itools account). One seems to refer to moving data from the .mac server to me and the other relates to IMAP (whatever that is).



What exactly do they do? If they secure my email why aren't they checked by default?
