Depends on how long ago they were deleted. Once they are emptied from the trash, the OS is free to write over that space and they could be gone for good.
If it was very recent, you may be able to get some or parts of some of them back. You could try the demo of FileSalvage, but as a demo it might be limited functionality. Purchase price is about $90.
If you use Leopard and have TimeMachine backing up, then you that would be your best bet. Or if you have a third party backup utility. If they weren't backed up, the something like FileSalvage is your only bet.
