When I try to convert a video for iPod/iPhone in iTunes it works but there is no audio. It is synced to my iPhone but there's no audio.

What are the formats of the audio and video tracks of the source file?

QuickTime is not a format. You may find the formats of the audio and video tracks of your source files by opening the files in the QuickTime Player and pressing [Apple]+[ i ] or by selecting the Windows>Show Movie Inspector menu item. If you have QuickTime Pro, then you may also press [Apple]+[ j ] or select the Windows>Show Movie Properties menu item.
