Switching to Mac from PC-What about my Touch?
I have searched like crazy, but can't find the answer to this question: How do I sync my Touch with my new Mac after syncing it since I bought it with a PC and also transfer all the music on the Touch to the Mac?

Officially, you'll have to copy all your files from iTunes on your PC to iTunes on your Mac. This is easy enough to do if you network the two machines: Just share and then drag your iTunes library folder from your PC onto the iTunes icon on your Mac. Then when you re-sync your iPod, it will delete all the files (originally synced from your PC), and replace them with the same files, now synced from your Mac.
Unofficially, and the only option if you are manually syncing files and not keeping copies on your PC, is to copy the files off of the iPod onto your Mac. This is harder to do. You can use a 3rd party program to do it (Google is your friend), or use terminal or a utility to make the normally invisible music that's on your iPod visible again, so that you can drag THOSE files over to your Mac's iTunes. Once again, when you finally sync from the Mac, all the music files on your iPod will be erased, then re-synced from your new machine.
If any of your music or videos or games are DRMed iTunes purchases (or weekly freebies), you'll also have to authorize your Mac to play songs and videos and games purchased with your account.
