Change Finder kind from "Folder" to "_Folder"

Can one change the KIND (as in "Sort by Kind") of a FOLDER from "Folder" (as seen in Finder) to Something else?

Nope. The "kind" property of a Finder item is read-only. Which makes sense.
You can compress it, and then the kind will be "ZIP Archive."

Give folders labels, then secondary sort by that.

I think kludging the Finder Comments as metadata would probably work also. You could script assigning certain metadata to a selection in the Finder.
You could use "real" metadata, but there is no Finder column to display it in.
