Can an iPhone be used without the phone part?

If I were to buy a new iPhone, would I have access to everything except the cellular Internet and the phone?

Would the iPod, maps, gps, camera work for me?

If so, I will just unload my Touch and will buy one of these.

The gps alone is almost worth the price of the new iPhone.

It seems that the new pricing is subsidized and is based on a 2 year contract. There might be a way around it but from the look of it. I wonder what the ETF charge will be if you sign up for service and cancel it in the first month?
