Mutiple Application Instances in X?

Why cant I start multiple instances of applications in X?

I want to run FileMaker Pro 5.5 for one task (a looped script, which KILLS FMP performance) and THEN LAUNCH ANOTHER INSTANCE of FMP 5.5 to work in (data-entry stuff). Why can't I do this in OS X? This is a common practice in Windows (and UNIX I think).

Any thoughts?

It's redundant. Once you load the resources once (which is what an application is), it would be a waste to duplicate the resources running already. That's why apps can open more than one file or project, and why good apps are multi-threaded.
