MobileMe and Mail settings
I have a forwarding email address that I give out to everyone as my main address - it saves hassle with different addresses, changing of ISP and instances such as the Apple shift to Mobile Me. However, I want to set-up MobileMe so that my forwarding address appears as the from address in emails. How can I do this? I've tried to add it as one of the addresses in the Mail app Preferences pane but this seems to create a problem with sending.

What I'm doing is simply changing the "From" field when I create each email. On the iPhone you can do this by tapping the "Cc/Bcc, From:" line when creating a message. Using Apple's Mail app you can also change the "From" field so the message appears from whatever address you choose.
In addition to changing the "From" field, you'll also need to change the server used to send the message. MobileMe won't let you send a message from a non MobileMe account using their server so you'll need to choose the server associated to the account you're using.
Basically, here's what I do. I have an account, me@xyz.com, and I want messages sent to this address pushed to me automatically using MobileMe. Obviously, I want to be able to respond from the me@xyz.com address as well.
- I have my me@xyz.com messages forwarded to my name@Me.com address.
- I do not leave a copy of my me@xyz.com messages on the xyz.com server because when I set this account up on the iPhone or Mail (necessary to get access to the xyz.com SMTP server) I don't want to see the message twice - once under the xyz.com account and again under the Me.com account. I know you can disable having the account check for mail but it doesn't always work properly on the Mac.
- I set my me@xyz.com account up on my iPhone and in mail as usual. Since I'm not leaving the messages on the server, nothing ever shows up in the xyz.com inbox.
- I set the iPhone to require me to manually check for mail on this account so as to not run down the battery checking for mail that won't exist.
When someone sends a message to my me@xyz.com account it gets forwarded to my name@Me.com account and pushed to my devices.When I respond to the message, I change the "From" field as described above and use the xyz.com SMTP server to send the mail.
I know it's not as convenient as being able to default the "From" field but it's the best I've found thus far.

The reason Mail won't let you send using any From address is because it's a security risk (this behavior is identical on all email systems). I send you an email you need to be sure that it really came from me. Domain Keys, reverse MX lookup, and SPF checks are ways to ensure the integrity of From addresses. These checks are performed to thwart spammers. If you were able to send using any From address the official term is called "spoofing".

Yes, thanks for that mikep. However, whilst I see the problem I'd have thought that the fact that the address forwards to me.com should be it will allow to send from that address as well. I think what I have is very common - it's a university alumni address which I intend to keep using forever and anon so that no matter where I work or live or I connect with etc. my address will remain the same, even if it's actually forwarding elsewhere. Inevitably I get emails if I email from a different account, or reply from a different account, saying 'Is this your new email now?' Kinda defeats the point

It actually didn't always be this way. One of the reasons they changed it was because several spammers were using bill@microsoft.com to spread malware. You can see why the rules were quickly put in place.

This would actually be quite simple to solve. You Add a "Reply From" address to your account. MobileMe sends you a confirmation email with a link in it that you must use to activate that "Reply From" address.
