Hi folks. What do I need to purchase to allow me to use the Apple wireless keyboard / mouse on my G5 2.5 desktop unit?

I know I need "Bluetooth" - but what in hell is Bluetooth, and what else do I need to purchase, and how much will it cost?

What you need is a USB-Bluetooth 2.0 adapter. You just buy one and stick it in the back of the computer, possibly install drivers off a CD if OS X doesn't recognize it otherwise, and you are in business. Like this one. Cost is negligible as you can see.

If you haven't bought the peripherals yet, I seriously recommend not getting the Apple mouse. It's horrible. Even the cheapest mice from Logitech and Microsoft are better. If you end up getting a non-Apple mouse, there's no point in searching for a Bluetooth mouse specifically, as they are more expensive, they are few in number, and as a general rule the best wireless mice are not BT. The only drawback here is that when you already have BT on the computer, a non-BT mouse will take one extra USB port for its own small USB plug. That's not likely to be a problem on a desktop tower.

Apple wireless keyboard, on the other hand, is excellent! I'm really tempted to buy one for couch use.

Gon is right about the Apple Wireless Mighty Mouse; the Logitech and Microsoft ones are definitely better.

As for the wireless keyboard; I have one but I have found myself using the wired version because it has a numeric keypad and a couple of USB ports.
