Edit: Perhaps I should elucidate further. There is much, much more to this than just replacement drivers for every major scanner that can be connected to a modern mac. The level of control over the hardware's operation is astounding, and you might want to use this even if your scanner's provider does chump for an X version of their own dummy-proof TWAIN software.
Still, the main reason is that it's probably better to spend $40 on this than give hundreds more to the parasites at UMAX.
<a href="http://www.omnigroup.com/applications/omniweb/" target="_blank">OmniWeb</a>: how could anyone forget this?! OmniWeb is THE most Mac-like browser available. Although CSS is flakey and rendering of large tables is a bit slow, it still easily beats out Mozilla and Internet Explorer as my favorite and default browser. What are some of my favorite features I use regularly? Pop-up blocking, ad blocking, customizable address filters, automatic page checking, built-in HTML editor with syntax coloring and highlighting, support for services (this post is automatically using Apple's spell-check service as I type), a truly customizable toolbar, a friendly download manager, a "network activity" window where you watch as specific items are loaded, and excellent compliance with Apple's UI guidelines (and yes, it even changes color when you switch to graphite).
<a href="http://www.versiontracker.com/moreinfo.fcgi?id=12743&db=mac" target="_blank">Pacifist</a>: view and install the contents of OSX "package" files -- extraordinarily helpful for grabbing things off the original Mac OS X Install CD or installing software from idiot authors who include their own .DS_Store files in the package.
<a href="http://64.90.168.102/index.html" target="_blank">Adium</a>: the best third party AIM client for OSX. It's extremely customizable and uses 0 CPU when idle.
Of course, my other "must have" software titles have already been mentioned: GraphicConverter, Weather Pop, Watson, TinkerTool, and TransparentDock.
Whatever you do, don't get Limewire. It's not going anywhere because it's stuck in Java and we all know how much that sucks...Acquisition is Cocoa and being actively developed for just the Mac platform and not Windows/Linux/Mac.
0.6 hasn't crashed once so far...
[EDIT: So as not to look retarded/be flamed for thinking Mac is an acronym I made it italic for emphasis.]
I haven't been in touch with OmniWeb recently. I think I haven't used it since the OS X beta. I just never got around to switching. This thread encouraged me to try it out again...
Well, it's creepy. I've been web-browsing for about five hours using Explorer. Switching to OmniWeb has filled the room with an eerie silence. My hard drive isn't running. My fan isn't running. My iBook isn't making any noise at all.
I could get used to this.
When I move from page to page, the hard-drive rarely spins up, and it goes right back down. With the hard-drive off, the computer isn't hot enough to need its fan. Wow.
i'm sorry but Limewire, despite all its slowness and such, is still the most reliable. Aquisition works sometimes. I find stuff, but rarely manage to download anything. Limewire seems to do better
System Manager - 32x32 -> 128x128 system, CPU, memory and network load graphs, floating and transparent. Right click the dock icon, and you get a list of processes, and a GUI for prioritising and killing. Also gives your IP addy, and your uptime. Indispensible.
VideoLAN client - Plays DVDs, VCDs, DivXs, and streaming videos. It has a bug when used with QuickTime 6 which prevents it from running in millions of colors.

Graphics:
-Graphic Converter
-Curator (free, best picture browser I know of)
-VueScan (I have a canon 1240u scanner, seeing that canon support sucks and this is a good app, I love it)
Video:
-Windows Media Player
-VLC (Video Lan Client) plays just about everything I can think of (read dovx, dvds, vcd, etc)
P2P:
-LimeWire
-Carracho
-KDX
-Hotline (Frogblast)
System:
-TinkerTool ( A MUST )
-Window Shade
-Zing! (adds an 'Open With' option to your right click. Add any apps you want, free and smart)
-Transparent Dock
-MOX, MacJanitor, etc (to clean up, optimize OS X)
Utils:
-Aladdin Stuffit Lite 6.5.1 (why does 10.1 STILL come with 6? duh)
-Monolingual (gets rid of hundreds of megs of other languages in OS X that you dont need)
-SMB Browse (free SMB (windows) network browser. Good until Jagwire has it)
Internet:
-Mozilla
-Explorer 5.2
-Net Monitor (free, I have a fetish for always knowing what my network is doing, if stuff is downloading. Unobtrusive, can put in menubar)
-FTP: Rbrowser Lite or Captain FTP
WebCam:
-Macam (free)
Other:
-Acrobat Reader 5.05 (OS X installs 5.01 dunno why)
-BBedit Lite (always good to have in case of unopanble text files or whatnot)
2. New best screensaver: <a href="http://www.SereneScreen.com" target="_blank">Marine Aquarium</a>
Here's the rest of my list:
Internet:
<a href="http://www.epicware.com/fire.html" target="_blank">Fire</a> a great chat client.
<a href="http://www.versiontracker.com/moreinfo.fcgi?id=11493&db=mac" target="_blank">Bookit</a> an amazing bookmark manager that includes a dockling for easy access.
<a href="http://www.macatawa.org/~chiper/ittool.html" target="_blank">iTunes Tool</a> is nice if you use iTunes a lot.

<a href="http://homepage.mac.com/rominar/net.html" target="_blank">Net Monitor</a>: display your network traffic in a window or in the menubar.
<a href="http://www.AmbrosiaSW.com/utilities/snapzprox/" target="_blank">Snapz Pro X</a>: maybe not a "must have" utility, but certainly a very handy one to capture the screen in pictures or movies.

Okay, so far the one's I've tried follow with a review.
Transparent Dock. It works well enough. Kinda feels like I'm tinkering where I don't belong. Decided against using it after a day and a half.
Alepin. Works sweet. This one was a keeper.
WeatherPop. Once I stuck it as a startup item it is pretty cool.
Flurry. Very nice indeed. Also a keeper.
LimeWire. Once I got the quit behavior fixed it is a champ. Keeper.
LaunchBar. Dunno about this one yet. Haven't really used it... Kinda invasive. ::shrug::
TinkerTool. Tad too many options. I do like being able to change the arrows and change system fonts. Guess it's a keeper.
Window Shade. Decided against this one. I like the current effect well enough. This is kinda a personal choice.
More Later.
